Hibachi-style cooking started roughly 200 years ago in Japan with the use of small, portable grills. With the development of technology, many techniques have been added to make this cooking style revolutionary. Likewise, many names have been assigned to this cooking method, but the most familiar term should be teppanyaki, which translates to “grilling on an iron plate.”

 

Just to be clear, Hibachis are small types of grills that use heat from charcoal or wood. On the other hand, teppans are flat-top grills that use heat from gas. Thus, teppanyaki-style cooking originated from Hibachi – but outside Japan, people treat them as one and the same thing.

 

It was in 1945 when the first modern Hibachi restaurant was established. Chefs made it a fun experience by juggling condiments and creating flaming volcanoes while maintaining the complexity of the dishes they serve. After 20 years, Hibachi was introduced to the United States which only increased its demand and popularity.
