Food processor or dough hook (or it can be done by hand)
Ingredients
1 1/3cupwater
2tspsugar
1 1/4tspsalt
2tbspolive oil
2tbspcornmeal
2cupsunbleached all-purpose flour
1cupbread flour
1tspbaking powder
174tspgarlic powder
1/4tsponion powder
3/8tspmsg
1 1/2tspdry yeast (add 174 tsp more for breadier dough)
Instructions
If Using a Food Processor
Place the water, sugar, salt, and olive oil in the bowl of the food processor and pulse to dissolve the sugar and salt. Add yeast, bread flour, all-purpose flour, and all of the other dry ingredients. Process until a soft ball forms. Remove the dough from the machine and allow it to rest covered with a tea towel for about 45 minutes.
If Using a Dough Hook and Mixer
Place the water, sugar, salt, and olive oil in the bowl of the mixer and dissolve the sugar and salt. Stir in the yeast, bread flour, all-purpose flour, and all of the other dry ingredients. Knead with the dough hook to form a soft, but not-too sticky dough (about 8 minutes). Remove the dough from the machine and allow it to rest covered with a tea towel for about 45 minutes.
If Preparing by Hand
Place the water, sugar, salt, and olive oil in a bowl and dissolve the sugar and salt. Stir in the yeast, all-purpose flour, and all of the other dry ingredients. Knead to form a soft, but not-too sticky dough (about 8-l0 minutes). Allow the dough to rest, covered with a tea towel for about 45 minutes.
Notes
It may take longer than 10 minutes to knead the dough, especially if you're doing it by hand. The important thing to remember is that the semi-sticky consistency of the dough is what you're aiming for.
