Simply place the ice cream into the blender, and push it down towards the bottom. Pulse the blender for a few seconds, scraping the ice cream off the sides as needed. Blend until the ice cream is creamy and smooth, but don’t overdo it.
Press the Oreo cookies into the ice cream, and add vanilla extract. Pulse a few times until crumbs are mixed in.
Divide into individual glasses and serve immediately. Garnish with additional cookies and whipped cream, if desired.
