The Cheesecake Factory’s Chicken Tortilla Soup Recipe

The Cheesecake Factory is well known for its mouth-watering desserts (of course), but it’s also known for much more. The Cheesecake Factory menu includes a wide variety of sandwiches, burgers, salads, flatbread pizzas, and so much more. During the winter month, you may be tempted to try out one of their classic soups, such as their Chicken Tortilla Soup but may not want to leave the comfort of your home. Well, there is good news. The Cheesecake Factory has shared the recipe for it’s fan-favorite Chicken Tortilla Soup. If you are ready to bring out your inner chef and enjoy your new winter favorite, let’s begin.

The Cheesecake Factory’s Chicken Tortilla Soup Recipe

First, you would need to pick up a few things. Here is a list of ingredients required:

  • 1/4 cup canola oil
  • Two tablespoons butter
  • 1 cup yellow onion, diced
  • 1/2 cup green bell pepper, diced
  • 1-1/2 teaspoons fresh garlic, minced
  • Three thick corn tortillas, 6″ taco size
  • 1-1/2 teaspoons chile powder
  • 1-1/2 teaspoons cumin
  • One teaspoon coarse salt
  • 3/8 teaspoon ground black pepper
  • Pinch cayenne pepper
  • 1/4 cup all-purpose flour
  • 1/2 cup thick tortilla chips, crushed into 1/8″ crumbs (can be done in a food processor)
  • 3-1/2 quarts chicken broth
  • 1 cup canned diced tomatoes
  • 4-1/2 teaspoons tomato paste

Now that we’ve got that out of the way, here are the instructions:

Step One: Prep the Soup Base

Start by heating the oil and butter in a large saucepot over medium heat, then add the onions, peppers, and minced garlic into the pot and cook until they begin to caramelize lightly.

Step 2: Add in the tortillas.

Crush the corn tortillas into small piece, preferably ⅛ inch or smaller, then add into the pot and cook until golden brown.

Step 3: Adding Seasonings

Add the cumin, salt, pepper, chile powder, and cayenne pepper into the pot and cook until the spices become aromatic.

Step 4: Allow to Simmer

Add in the ¼ cup of all-purpose flour and cook for 4 to 5 minutes. Then, add the chicken broth, canned diced tomatoes, and tomato paste to the pot and bring to a boil. Lower the heat to a simmer and cook until the tortilla is tender. This may take 10 to 15 minutes.

Step 5: Blend, Serve and Enjoy

Blend the soup until smooth using an immersion blender. If you don’t have an immersion blendI’m handy, you can blend in batches using a regular blender. 

You can use crispy tortilla strips, shredded cheese, cilantro, sour cream, or lime wedges as toppings when serving.

  1. You didn’t mention putting any chicken in the Chicken Tortilla Soup recipe!!!
    Need to know if it takes white or dark meat chicken plus the amount.
    It sounds very good according to the seasoning ingredients.
